Pork meat is not harmful, on the contrary,it provides protein, says UNAM academic.

The bad reputation of this meat comes from bad information.

 

When comparing this same meat with the nutritional properties of others, it is almost equal to lamb, poultry and beef, according to a UNAM expert

 

Pork meat produced in Mexico is an important source of protein, vitamins, amino acids and minerals, plus the intramuscular fat content is similar to or lower than other meats such as beef, sheep, goat and lamb, Said María Salud Rubio Lozano, an academic at the Faculty of Veterinary Medicine and Animal Science (FMVZ) at UNAM.

 

She commented that people have the belief that this type of meat is bad for being a carrier of large amounts of fat due the animals were bred not only to obtain meat, but also butter and bacon, among other derivatives. Despite this, she said that for more than 60 years things have evolved, mainly in the lines of pigs, developed and selected to provide little fat.

 

At the moment Mexico is one of the main exporters of this type of meat in the world, since the one that is produced contains less than 2 percent of fat in the spine, contrary to that of bovine, that have between 1.5 and 5 per hundred.

 

The UNAM academic clarified that in the country there are lines of pork such as the Mexican pelão, which can have up to eight percent of intramuscular fat, “but are intended only for the elaboration of mature products such as hams or bacons.”

 

Rubio Lozano accused that the contempt for these products is because of the bad information, reason why the national pork council has been working with the population and the doctors, since they are the ones who have demonized pork consumption.

 

When comparing this same meat with the nutritional properties of others, it is almost equal to that of lamb, poultry and bovine. All these represent a great source of protein, essential amino acids, vitamins and minerals, where according to studies, with 100 grams of meat a day the necessary contribution of these nutrients is achieved, she said during an interview.

 

“Another myth about pork is to believe that it alone transmits cysticercosis, and it is not true, because it would have to be contaminated with fecal matter containing eggs of Taenia solium (solitary), and is unlikely if it was purchased in establishments where there is refrigeration, packed, and processed from TIF slaughterhouses, “said the professor.
